Okay, the first thing I needed to do was make some breadcrumbs since I never have any storebought breadcrumbs on hand. I had some day-old French bread, so I sliced it lengthwise and put it in a 250 degree oven for about 25 minutes or so. This just dries it out and gets it nice and crispy and hard. That’s what you want for breadcrumbs.
The beef was tender and delicious. Thank you for the new cooking skill for slicing flank steak – I followed the freezer method and used an electric knife. I cooked in careful batches so as not to crowd the pan to allow proper searing. I pretty much made the recipe exactly, but it seemed to require more cornstarch to cover the meat, so I increased it be a few tablespoons. Maybe that increase caused my sauce problem later on. My housemate said that he liked it better than his favorite Mongolian lamb that he loves to order at a local Chinese restaurant. I would have liked there to be more sauce. Perhaps I let it reduce too much, but it was worth it. I wonder whether I should increase the sauce recipe next time so as to make nice drippings over the white rice. Should I double to sauce recipe or just increase by half? This dish was a winner that I would make again.
You can make this one pot chicken parmesan pasta in any large skillet or pot, but I always make it in my enameled dutch oven.  When I’m stirring the pasta as it cooks, I don’t want to be worried about the liquid slopping up and over the sides.  I’m a messy cook, but no one likes to clean up burn on sauces from their stovetop!  If you don’t have a dutch oven, you can use a deep sided skillet, or a stock pot… but I highly recommend picking up a dutch oven, they have so many uses!!
For the tomato sauce: In a large pot, heat the extra-virgin olive oil and cook the onions until translucent. Add the tomato puree and bring to a boil. Add the salt, and pepper, to taste and lower the heat to medium. Add the uncooked meatballs to the pot and let cook on medium heat for 30 minutes.
Question: Is it possible the measurements of salt and pepper are flipped in the sauce recipe? I just made this for my family, and all our mouths are now on FIRE! It’s really good aside from that, hahaha.

1. Cooking meatballs in the sauce alone can make them mushy. I recommend putting them under a broiler for about 5 minutes, turn over once and broil for another 5 minutes first before you add them to the sauce. Broiling adds a nice brown color and enough crisp to prevent mushiness

I haven’t tried with rice, Ginger–and I assume you mean cooked rice. It wouldn’t hurt to try. I don’t think the outcome would be bad, just slightly different. If you do try, I’d love to know what you think. And if you are looking for a good gluten-free substitute, I like crushed Rice Chex. : )
I have now made this over 10 times. It is a go to dish if I want to impress. The only changes I make are that I use San tomatoes and I chill the meatballs before I put them into the sauce. Last time I made this was for New Years Day for friends staying over. I made the meatballs the day before and put them in the fridge. They were amazing the next evening when I made the sauce and threw them in. I do it every time now. Even if you can only chill them for an hour prior to cooking.
