You can use a hand mixer, but I would add a couple more minutes to the mixing time because hand mixers aren’t as powerful. The mixing time is fairly long, but it’s really the key to getting the crackly surface and a thicker cookie. Good luck! =)

Sorry for the confusion! You melt the bittersweet chocolate chips with the butter, and then you add in the mini chips with the nuts. I’ve added those distinctions to clarify. Please let me know if you have any other questions!

Also, I’ve been chasing a technique to produce a crispy crust on the meatballs without compromising tenderness and juiciness. I tried adding a little cornstarch to the dusting flour, but I’m not sure it helped much. My concern about the dusting flour is that it runs the risk of introducing bitterness as well as unpleasant texture. Your thoughts?

Turned out ok, but would recommend using a bit less oil. Ended up having to drain some off when I was done. Also ended up with quite a bit of corn starch sticking to the pan and the coating falling off a bit.
