Chicken and waffles is a Southern tradition. I turned it into a sandwich with a sweet and spicy mustard sauce to give it a kick. Our testers called it “naughty and delicious” and said they could eat it all day long! —Elizabeth Dumont, Boulder, Colorado
I also made 3 at one time. I baked one and froze two loaves. One trick for freezing (other than shaping it into the pan- because I don’t have a loaf pan) is I scoop the beef mixture directly onto a large piece of plastic wrap- I did this twice for two loaves, diving the mixture evenly. Wrap mixture with the plastic. Then, I make it into a flattened type of “loaf” and wrap one more time in foil. I put it into a labeled freezer bag with instructions on it. When ready to use- I’ll thaw it overnight and use the mixture in a 9×13 baking dish (shaping it into a loaf at that point using the plastic wrap so my hands don’t get dirty). Then I’ll just cook it as normal!

“Made this last night, OMG, it is the best. I must say I did make some changes, but my hubby has always liked my usual meatloaf, but he loves this one. I replaced the milk with a can of golden mushroom soup, packet of Lipton onion soup, deleted the sage, not big sage fans, The amount of cracker crumbs had to increased. Thank you for creating this website, it’s become my go-to for dinner recipes and I love the pictures, so helpful esp for a newbie cook like me. Tried this recipe tonight but the mayo and cheese mixture did not stick to the bottom of the chicken (i used the rack too), could it be that i put too much mayo? Other than that the chicken came out moist and tasty.
The key to success with this recipe is even heat. If the oil gets too hot, the chicken may brown too quickly before fully cooking. You can lower the heat, or brown the chicken on the stovetop and then cook in a 350° oven until done. If the oil is not hot enough, the chicken will absorb too much of it. Omit spices in the breading, if you prefer.
Garlic is rich in manganese, calcium, phosphorus, selenium, and vitamins B6 and C, so it’s beneficial for your bones as well as your thyroid. It’s thought that much of garlic’s therapeutic effect comes from its sulfur-containing compounds, such as allicin, which are also what give it its characteristic smell.
Cinnamon is a potent antimicrobial agent that also enhances your antioxidant defenses. It’s been found to kill E. coli and many other bacteria. Its anti-inflammatory compounds help relieve pain and stiffness of muscles and joints due to arthritis. Also helps prevent urinary tract infections, tooth decay, and gum disease, and helps with blood sugar control.
I made this for the first time ever making meatloaf. Used club crackers crushed up because I didn’t have breadcrumbs or oats. Hopefully it turns out. It seemed really moist after I added milk hoping it turns out okay.
