gd pm I don’t need to read all 116 comments to know this is terrific! my mom made it close to same. she uses homemade bread crumbs (stale bread crumbs stored in cold oven until ready to pulverize). some diced green peppers & onion. I lined loaf pan with raw bacon. topped with bacon. serve with mashed potato & peas. he calls it another “signature” dish. even on a chilly rainy summer night. ps prep potato, onion, peppers the night b4 & easy week night meal. thank you.

CG: Ridiculous awesomeness onmy plate!!! How did you come up with this?!?? It’s so simple and easy and why haven’t I thought of it haha I L-O-V-E this! I had it with asparagus and mashed potatoes. The combo is delicious! The only issue I had was I didn’t have any skinless boneless chicken. I only had skin on and bone in thighs. But I prefer dark meat so I always do thighs. I took the skin off. Used dried ingredients (except for the garlic- oh I used 5 cloves too 😉 because I forgot to restock my fresh at the grocery store yesterday. But it had to cook longer because of the bone in. You can use this method and recipe pretty much any time that you need to bake up some chicken breasts. It’s a tried and true method, taught in culinary schools, and it works each time with whatever seasonings you wish to use. My go to’s are salt, pepper, oregano, Italian seasoning, garlic powder, and more garlic. I’m pretty sure garlic is part of my DNA… or something like that.

This is very similar to my grandmothers….sometimes she did saltines sometimes she did bread. But her topping was tomato paste. Never knew about using ketchup, brown sugar and mustard. I am going to have to try this recipe this week! 🙂

I don’t flip but I suggested to De that it might crisp up the bottom some. I think I would lose coating and not affect it much. I use a very light coat of mayo and don’t think it is much of an issue. Monica has a suggestion that sounds reasonable.

Nita L.: Perception of taste is different with almost every person. I doubt that it’s a flaw with the recipe. We love heavily seasoned food so I try a recipe once and then adjust the seasonings the next time if needed. In this case, I used dried spices and adjusted the amount to our preference.
