Even when well cooked, chicken make for a pretty uninspiring protein all by their lonesome. A far more exciting preparation is butterflying and pounding the breasts, then rolling them around flavorful fillings. This recipe draws inspiration from queso fundido, stuffing the chicken with a mixture of chorizo, jalapeño, and onion, then cooking it in a cheese sauce made of sharp cheddar, pepper Jack, and Velveeta. Yep, that’s right—processed or not, Velveeta has a smoothness that’s tough to beat.
Why it’s good for you: Ghee is a clarified butter that is made by melting butter and skimming off some of the fat. It can be easier for some people to digest and is a staple of Indian cuisine. It also has a slightly nutty flavor. It’s high in vitamins and can be used as an alternative to cooking oils or butters.
 I made this and it was tasty, but I think a lot of the instructions  were way off. At least for me they were.  The brown sugar mixture as listed in the recipe did not make nearly enough to cover the four chicken breasts that I used.  The fourth breast  didn’t get much of the  brown sugar coating at all.  The bacon never did cook thoroughly at the temperature and length of time recommended in the recipe. I think 375 wasn’t hot enough and 25 to 30 minutes definitely wasn’t long enough.  I ended up baking the bacon-wrapped breasts for 55 minutes and my family told me they still felt the bacon was undercooked.   The chicken, however, was juicy and delicious & cooked completely.   My recipe didn’t come out beautiful like the picture LOL. I will definitely have to tweak this recipe next time.

My husband loves this recipe. He makes sandwiches to share with golfing buddies, they all go crazy for the meatloaf. Today I added a twist, after seeing a Bobby Flay cooking show. I used Korean Bafbeque sauce and shisito peppers instead of catsup. I also made Ina Gartens smashed potatoes to serve with this and steamed broccoli with lemon. Crazy good and healthy? I made meatloaf with 1 lb mild pork sausage and 1 1/2 lb of ground beef, 20% fat, but fat drains off in my special meatloaf pan with insert to hold meat and let fat drain to bottom. Can’t wait to see if the guys go for these sandwiches.

This was outrageous! I love a little mayo, my husband not a huge fan, we both love parses an, and both prefer skinless chicken. Gotta say, this was delicious, easy to make, and will become something I’ll use again and again. Thanks!
Just made these for dinner tonight, but since my Grand girl wanted “Orange chicken” I added a few drops of extract and made a small cornstarch slurry to thicken the sauce more and she loved it… great flavor and quick dinner since I used chicken breast strips cut into thirds .

    in leveling the unit and cleaning the inside of the evaporator/ductwork and fan that were neglected for some time.

    This was an ordeal because of the access– had to cut the lines/re-solder to get the unit
    out. The evaporator coils were packed with dirt but cleaned-up nicely.
    Gave instructions for follow-ups and keeping the drain line
    clear. No hard sell approach for additional services, just courteous and
    factual in his observations. Too bad the furnace filters were not replaced regularly by former owners.

    Tuned-up my A/C and went through all the proper steps to make sure
    it was in good shape including leveling the outside fan And
    additional evaporator coil/fan cleaning. Very knowledgeable and prompt in getting things taken care
    of.
    He was very professional and kept me updated on everything he was doing and
    how everything looked He went out of his was to ensure
    he did not track any dirt in on my new floors. I have nothing but good things to say about
    him and will continue to use him for my hvac services.
    He has earned my complete confidence and trust.
    We did a lot of estimates, but this company truly went above and beyond to provide us with information for our home and financing options.
    From the start, their prices were the best, and their installation was
    very professional, even updating us each step of the way with
    items they noticed or fixed/updated during. Their staff was
    perfect to work with.
