ALso, it could be the yolks in the eggs. Usually white cakes only use the whites. I noticed that when I use Egglands Best, the yokes  are almost gold, I too made a white cake and called for 3 eggs, I use daily 2 egg whites and the the third egg I used the whole gig and the cake was more yellow than white. 
We were skeptical at first, but after trying guacamole with a little ground cumin added, we were sold. It’s a little smokey, but mostly, the cumin just brings everything together and punches up the flavor.
Wonderful recipe! Even my toddlers gobbled it up. That’s when you know you’ve got a winner. Put a little extra soy sauce and garlic because we love those flavors, otherwise stayed true to the recipe and it was divine! Thanks for our new favorite chicken. 🙂
I’m so sorry to hear that these cupcakes didn’t turn out quite right for you, Julie. I’ve never had these fall in the middle, so maybe we can work together to figure out what happened. Are they falling quite a bit in the middle or just slightly? Did you make any other adjustments to the recipe besides the coffee? I know you mentioned that you used new baking powder/soda, so I wouldn’t think it would be that. Have you tested them for freshness just to make sure? Also, did you use natural unsweetened natural cocoa powder or did you happen to use dutch process?

I really can’t wait to make these, they look delicious! But would it make a difference if I use cane sugar instead of granulated sugar or if I use skim milk instead of 2% ? Because I’m just wondering if it’s the thickness of the milk that gives it more of the flavor/thickness of the cupcake?

Wow! These all look delicious! My personal favorite is red velvet. A few weeks ago, I made some amazing red velvet cupcakes for a party. Someone said that they were comparable to D.C. Cupcakes! Although they were really flat and ugly without the icing, my daughters made some chocolate toppings to go with the cream cheese frosting. They were really good. I think I will have to experiment with the dark chocolate cupcakes with the peanut butter frosting! They look great and addicting! 🙂

Wow! What a great recipe. My family LOVED it! Because my fresh mushrooms were a little slimy and beyond their peak, I used frozen shiitake mushrooms and they worked fine. I also added the stems of broccolini and in the last 5 minutes I added frozen peas. This pasta was absolute comfort food. I will definitely move this into my family dinner rotation.

Should you add lime to your guacamole? I say no. I side with the great Diana Kennedy who says you should never add lime to your guacamole because it spoils the delicate balance of flavors. Can you add lime? Of course. I would recommend that you add lime sparingly to gently give the flavor an acidic boost. You want to enhance the flavor not overpower it.
