Hi, Linda! Yes, you can use chicken breasts instead. The cooking time would really depend on the chicken breasts. For four large, I would give them at least 30 minutes, and then check them for doneness. Hope that helps!

Hi Kaity, I am not a doctor or a nutritionist so I can’t really say. If you have high blood pressure, or other conditions I know nothing about, it might be important for you to watch your sodium intake. I personally don’t worry about salt too much; sugar is my bigger concern, generally speaking. Salt aside, I believe avocados are a source of healthy fats and the rest is just veggies. This is an excellent recipe! I first used it to make cupcakes for my two nieces and was so impressed by the wonderful taste and texture. Later on used it to make layer cakes (multiplied 4 times). I’ve also infused the milk with tea bags to make an earl grey version – this was a hit with party guests!

Hi there! I’m not sure you’ll even see this several years after you posted but I am so excited to make this tonight! I wanted to pump up the protein a little (I’m a vegan) but I’m not very experienced with cooking and swaps. Would black beans taste good in this? And hemp hearts? I try to avoid oats but I went ahead and used GF oats for this because I wanted to taste the real recipe. Those balls were good! Hearty, flavorful, and filling. I served them over zucchini noodles w/ a side of broc. Pretty easy dinner for a Meatless Monday. I would make them again!

Wow, just wow. This was truly amazing. This is definitely a keeper recipe. I made this today and can’t wait to make it again. My family loved it. At the end I did broil it for 3 min on high and 2 min on low and the skin was just as crispy as it could get. Just wow. Truly amazing recipe. Thanks for sharing.

  1. I have a conventional oven so the fan is going all the time. It’s so hard to find a vanilla recipe that works well for me and that darn oven. How do you think this recipe will be in this type of oven? Any adjustments you can suggest? All your recipes look amazing! 🙂
