You will always find a bag of shrimp in my freezer – they’re delicious, healthy and only take minutes to cook. This spicy garlic shrimp is a favorite at my house. I often serve this dish as a main course with pasta or rice, but it also makes an amazing appetizer. Best of all, it’s ready in just minutes so it’s perfect for those busy weeknights when you don’t have a lot of time to spend in the kitchen.

Hot cooked quinoa infused with garlic and fresh thyme rounds out this Provençal-inspired dish (Bajane is a term for the midday meal). Chickpeas are a staple in Provence, where they are often stewed and served with pasta and vegetables. In this version, chickpeas, leeks, carrots, fennel, and spinach are served atop protein-rich quinoa for a vegetarian main that feels complete without the meat. Deglazing the pan with a splash of white wine picks up the caramelized vegetable bits for more flavor in the finished sauce. The alcohol will cook off before the sauce is done, but if you’d rather omit it, you can substitute vegetable broth or water.
2 Pour half the olive oil into the base of a large roasting tin. Arrange the sweet potato wedges, shallots and garlic in the tin. Scatter the thyme, rosemary and chilli over it all (or drizzle with ají). Lastly trickle the rest of the olive oil on top and sprinkle generously with sea salt flakes.

I tried this tonight, and the whole family- 2 adults, 5 y/o, and a 2 y/o- loved it! I do think next time I will probably add more garlic. It tasted delicious, but we really couldn’t taste the garlic, and…. we love garlic, lol. Thanks for sharing this!
These spicy garlic shrimp are simply cooked in a pan with olive oil, garlic, lemon zest and juice, parsley and red pepper flakes. You can easily adjust the heat level by using more or less of the red pepper flakes. I often reserve some of the shrimp without pepper flakes for the kids and then spice up the adult portions.

Thank you for the inspiration Karina, as this is a great dish. I varied it some mainly using shallots instead of onion and pecorino Romano instead of parmesan. Also, I included white wine, which I think made a worthwhile difference.
During the second half of the baking time, you’ll baste the fish again — this time with a mixture of honey and maple syrup.  It gives the salmon a subtle layer of sweetness and adds a great caramelized texture on the exterior of the fish.
1 Preheat the oven to 200C/400F/gas mark 6. Peel the sweet potatoes and cut into wedges. Peel the shallots and cut them lengthwise into wedges. Peel and the garlic cloves. Deseed and thinly slice the chilli, if you are using fresh chillies.

I have since altered the way I’m eating yet again (it’s a work in progress friends!) and am not straight up Paleo.  So I’ve altered the recipe a bit but it’s still way way way healthier than standard lasagna.  For all you saying in your mind, ‘My family will not touch that’ or ‘My husband would rather die than eat vegetable substituted lasagna,’ I hear you.  I get it.  My man doesn’t consider anything a meal without meat.  This recipe does have meat, but you could easily remove it.   BUT try it.  Just once.  See if your family likes it.  And then never look back.

I love this recipe, I’ve already made it 3 times! I like to use spinach instead of kale. It’s a great easy meal to whip up after a day of work, and there’s enough for dinner and lunch the next day. One of my very favorite Chocolate Covered Katie recipes 🙂
